Japanese Wagyu
We select the shoulder-to-back cuts of Japanese Wagyu, which have a perfect
balance of marbling and tenderness, making them ideal for hot pot and shabu-shabu. Cooking Deluxe
Japanese Wagyu to well done, Premium Japanese Wagyu and Japanese to medium rare is recommended.
Ibérico de Bellota Pork
Bellota refers to the highest grade of Spanish Iberian pork. Its delicate
texture is accompanied by a subtle acorn aroma, earning it the reputation as the Rolls-Royce of
pork.
Atria pure rare pork
Kanpai Group is the exclusive distributor of Atria Finnish pork in Taiwan.
Atria Finnish pigs come from highest latitude farm of Finland and have never been treated with
antibiotics and hormones during their course of lives. Atria pork is all natural, pollution free
which has a refreshing and pleasant aftertaste. Cooking it to well done is recommended.
Native Chicken from Yunlin
We use Native Chicken from Yunlin, which is raised for 2.5 times longer
than regular poultry, in a carefully nurtured environment. The meat is firm and has a chewy texture.
Thoroughly cooked is recommended.
Australian Wagyu Small Intestine
A popular beauty product in Japan, it features rich and tender fatty layers
resembling clouds, packed with ample collagen and a melt-in-your-mouth texture.
Assorted Seasonal Vegetable
Kurogeya provides fresh and seasonal vegetables, greens, and various
mushrooms to pair with the hot pots. When the mushrooms are cooked, Guanylic acid is released into
the broth along with the Inosinic acid from the meatballs are the keys to maximize the umami of the
soup base.
